Cultivated in Quercy since the Middle Ages, saffron production reached its peak in the 15th/18th centuries. In recent years, the cultivation of Quercy saffron has been revived. Saffron is a 20 to 40 cm high perennial plant with purple flowers. When separated and dried, these pistils are the famous red gold. Denise Soulier offers tours of the saffron farm at La Revelle (in Penne 81140), located on a hiking trail between the Cazals water tower and Senchet. Visits for groups by appointment during the flowering season. Lectures are available for groups all year round. Information for visits at the Tourist Office.
